Bio
Dr. John Gieng is an Associate Professor specializing in nutritional sciences with a focus on evaluating and improving health and performance through sustainable diets and behaviors. At San José State University, he combines his expertise in human metabolism, mammalian physiology, and applied nutrition education in both his teaching and research.
Research Focus:
- Sustainable Foods and Health: Evaluating the nutritional quality of sustainable foods and their impact on health.
- Diet and Biotechnology: Examining the impact of diet on health-related behaviors and programs using biotechnology.
- Nutrition and Performance: Investigating the relationships among nutrition, metabolism, body composition, health, and performance.
